Las Cuevas de Luis Candelas (the Caves of Luis Candelas) is one of Madrid's oldest taverns and is named after a famous bandit who is almost permanently represented outside by a suitably dressed doorman, complete with pistol.
Legend has it that this Spanish version of Robin Hood stored his treasures in these cellars under the walls of the south-west corner of Plaza Mayor called Cuchilleros.
As you walk down the steps from Plaza Mayor, on the left you can enter the restaurant proper and sample the traditional cuisine based around roasts, done in a wood-fired oven.
At the bottom of the steps and just round the corner is where the doorman keeps guard. Here you can stop off at the bar for a quick glass of sangría, beer or wine before passing through an archway to an area of low wooden benches and tables.
You can order a variety of raciones (individual plates of cured ham or cheese, grilled garlic shrimps, etc.) and tapas here, or keep going further into the caves if you prefer to dine in the 'normal' way, specialities again being the variety of roasts.

Mi friends and I dined there in 1957, It was unique and the food was

On OCT. 16 my niece and I dined there and could not have chosen a better
place for great service, great food and great music.
The guys playing the music were amazing.
Can you sing a Venezuelan song? I asked them and to my surprise and delight
it was 'Alma llanera'...how about Luis Miguel and 'I woke up with you in my
arms'...sure enough, they knew it...Then, testing a bit further, I asked
'how about a tango?...sure, they could sing tango too...my last question
was 'does any of you dance it? and of them said SI! OK..I am a tango
dancer so let's dance! and that is what we did to the entertainment of the
other guests. Unforgettable night! we were given a souvenir of the little
sangria jar. So much fun...we won't forget it!

Very nice atmosphere, friendly staff, cool live music, and amazing roast
baby lamb! That was the best lamb I've ever had, and I've had a lot of
lamb. We initially wanted the suckling pig, but around 10pm they were
already out, so go early if you want the pig. The staff were very nice and
helpful. My husband has stomach problems, and when the staff saw he wasn't
feeling good, they didn't charge him for the lamb (which he couldn't
finish), and brought him some kind of herbal tea to calm his stomach! That
was very nice. I definitely recommend the place.

I worked and had fun for 6 months in Madrid. I had several dinners at your
restaurant(very good food and wonderful ambiance)in early 1966,and dinners
at Botin and Casa Paco (their fillet mignon is the best). Once, when I
dined in your place accompanying Mari Flor, the lead singer at the time in
a flamenco bar at the bottom of the steps of Cuchilleros, located just
before Botin. As your band came to our table to sing, Mari Flor told them
that she will sing. She sang a song, and all other people in the dining
room applauded standing up and asked her to sing more. We are planning a
vacation in Spain – and I like to schedule visiting my old favored places.

The restaurant recalls the famous outlaw Luis Candelas (spanish vesion of
Robin Hood). It's a very nice and entertaining restaurant when you think
that you are eating where Luis Candelas hid the stolen treasures!!!
The decoration is typical and especially the doorman dressed of Luis
Candelas keeping the entrance of the bar. The food is excellent : suckling
pig, roast lamb and the desserts are delicious. I really liked the "tuna" a
group of music that sings in the restaurant every night traditional
songs!!!

One of the best restaurants in Madrid. Service is excellent and friendly,
all the food is outstanding, with typical Castilian dishes. Not terribly
expensive for such a fine restaurant. The decor is also very traditional.
