Fábula Príncipe de Vergara is located in the elegant central Madrid neighbourhood of Salamanca, in the heart of the business district. The restaurant's four small dining areas provide an intimate and comfortable setting where diners can enjoy the fusion of traditional Mediterranean cooking with the chef's original and modern touches. The Fábula Príncipe de Vergara is probably the most emblematic of the Fábula group's restaurant. Dishes include fried eggs with baby squid and potato shavings; pan-fried monkfish with wild mushrooms and an oyster sauce; steak tartare with con grilled foie gras and avocado; and to finish, crispy warm apple tart.
